HELLOOOOO!
Sorry for the radio silence these past few months, but since my last post (Dressing the Bump – Third Trimester Maternity Outfits), things in the Moylan household have gotten a lot more fun! This past August, Jim, big brother Charlie, and I welcomed the newest addition to our amazing little family; Emma Keeler Moylan. She has brought so much love and excitement to our lives these past few month, the holidays have totally snuck up on me!!!
“IT’S HALLOWEEN TIME!!”
Here a couple of my favorite, Pumpkin inspired treats just in time for the holiday:
Pumpkin Chocolate Chip Cupcakes
The original recipe was given to me a few years back by my friend Kellie and it was for Pumpkin Chocolate Chip Bread. Naturally, I decided to make the recipe slightly more decadent by adding cream cheese frosting and turning it into a cupcake.
Ingredients:
- 3 Cups granulated sugar
- 1 (15 oz) can pumpkin puree
- 1 Cup veggie oil
- 2/3 Cup water
- 4 eggs
- 3 1/2 Cups all-purpose flour
- 1 Tbsp ground cinnamon
- 1 Tbsp ground nutmeg
- 2 Tsp baking soda
- 1 1/2 Tsp salt
- 1 Cup Chocolate Chips (mini work best, I used dark chocolate)
Directions:
Preheat oven to 325 degrees. In a large bowl or stand mixing bowl, combine sugar, pumpkin, oil, water, and eggs. Mixture will look very loose.
In a separate bowl, combine flour, cinnamon, nutmeg, baking soda, and salt.
Fold in chocolate chips.
In thirds, add dry ingredients to wet ingredient mixture until completely combined.
Line mini muffin tin with mini paper cups. Fill cups 3/4 of the way filled. Bake for 20 minutes.
Let cupcakes cool completely
Once cupcakes have cooled, frost with cream cheese frosting. I used a store bought frosting this time, but here is a great recipe.
Pumpkin Balloon Treats
As you know for previous posts, I like to make holiday treats for my son Charlie’s daycare. This Halloween, I found the most adorable way to package holiday treats for the kiddos. I found this creative idea on the The Hostess with the Mostess blog.
All you have to do is get an orange latex balloon and fill it with whatever treats you want. Here is what I filled ours with . . .
Packaging:
- Orange Latex Balloon
- Green Ribbon
- Clear Rubber band
Treats:
- Glowing Monster Ball
- Mickey Mouse Halloween Stickers
- Anne’s Organic Gummy Snacks
- Plastic Skull Ring
Once filled, blow up balloon and tie with a clear mini rubber band or knot closure. Curl green ribbon around knot and draw a jack-o-lantern design on the front.
